Paleo Granola muesli


4 cups of mixed nuts - I used almond, pistachio, hazelnuts, walnuts

1/2 cup of pepitas

1/2 cup of sunflower seeds

2 cups of dried fruit - I used apricots, cranberries and sultanas

1/2 cup of goji berries

1/4 cup chia seeds

1/2 cup quinoa flakes

1 cup dedicated coconut

1 cup of coconut oil

1/2 cup honey

2 tsp of vanilla extract

(The best thing about this recipe is you can change it to what ever you like, this is what I had in my pantry today but next week it may be something a little different)


Before you start I recommend you soak your nuts and seeds for about 7 hrs. During this time change the water a few times. Then dehydrate the nuts and seeds. I used my oven on low for about 3 hours. This is such an important part as it removes a lot of the phytic acid found in nuts and seeds and activates the enzymes, which assists in digestion.


1. Preheat oven to 160 degrees

2. Add nuts, seeds and dried fruit to food processor. Process to medium size crumbs

3. Melt coconut oil and honey under low heat

4. In a large bowl add nuts and all other ingredients. Then add coconut oil and honey and mix well

5. Line a tray with baking powder and spoon in the mixture and flatten down with a spatula.

6. Bake for about 20 minutes until golden brown. During the cooking stir the mixture a couple of times

7. Remove and let cool. It will harden as it cools then break into pieces and store in air tight container
