Cauliflower Pizza Crust – yep its gluten free!


1 medium head of raw cauliflower (grated you should have 2-3 cups of cups. It looks like rice after grating or I use my thermo mix and pulse it in the thermo mix)

1 cup of shredded mozzarella

2 tbspn finely grated parmesan

1 egg

½ tspn of sea salt

1 tbspn Italian seasoning


Preheat oven to 200C

Grate the head of cauliflower and then wrap the cauliflower rice in paper towel and drain off the excess water. Mix the cauliflower with the cheese, egg and seasoning. Put the mixture onto a tray lined with baking paper. Pat the mixture into a crust that is fairly thin but with no holes (about 1.5 cm thick) and 13 inches across. Cook the crust for 15 minutes (it should be slightly browned) Blot the top of the pizza with paper towel. Flip the pizza onto a new tray with baking powder so you can brown the other side for approximately 7 minutes. Now you have completed the crust now be creative and add your sauce and toppings!!
